Our chef is an expert in crafting twists on Marchigiano classics, like vitello tartare and black risotto at Each dish is made only from local ingredients, such as a special flour for our pastas that is made from an ancient, easily digestible strain of local wheat called “jervicella,” and delicious seasonal vegetables. We also serve hand-made desserts like mousses and tarts, and are happy to prepare off-menu items upon request here at one of the best resorts in Montappone.
